Chicken Tacos

As a fanatical aficionado of cilantro, I cannot ignore its important role in Mexican cuisine. I love Mexican food – perhaps not as ardently as I love cilantro, but, let’s face it: there are few things in the world that deserve this highest level of admiration. I would lie if I said I remember the moment when I first tried cilantro. I do remember, however, that right after the first bite I knew we were going to be good friends. You can either love or hate cilantro – some people loathe it, claiming that it tastes like soap. Personally, I don’t care for eating soap, but eating cilantro is one of my favourite activities.

As someone who loves mexican food, you just can’t ignore cilantro. It’s the cornerstone of the cuisine. Cilantro just makes everything better. After you try it for the first time, you just know. It’s one of those things where you either love it or you hate it.

Cilantro on tacos is a must. You can use it with soft or hard shell one’s. It goes well with all types of meat like beef, chicken and fish. You can even put some grated cheese on your tacos, with guac, tomato salsa, fresh sour cream and of course a hint of lime.

It all depends on what flavors you prefer.

RECIPE: CHICKEN TACOS

Ingredients

  • soft taco shells
  • shredded chicken
  • guacamole
  • tomato salsa
  • jalapeƱos
  • lime juice
  • cilantro

Method

  • Toast your shells and add your ingredients.
  • Serve with a side of lime juice and beer

RECIPE: SHREDDED CHICKEN

Serves: 2

Ingredients
  • 350 g of chicken breast
  • 1/2 tsp. of chili flakes
  • 1/2 tsp. of sweet paprika powder
  • 1/2 tsp. of ground cumin
  • Dash of salt
Method
  • Mix all the spices with lime juice.
  • Rub paste on chicken breasts
  • Put it in a baking pan and roast at 375F for about 25 minutes.
  • When the meat is soft, shred your chicken by using 2 forks

RECIPE: TOMATO SALSA

Serves: 2

Ingredients
  • 3 tomatoes, diced
  • 1.25 small red onion, diced up
  • one tbsp. of chopped cilantro
  • 1/2 lime Juice
  • a pinch of salt
Method
  • Mix all the ingredients.
  • Set aside for 25 minutes.
