Avocado chocolate mousse with passion fruit

The creator of this dessert definitely deserves a culinary Nobel Prize. It's vegan (use maple syrup instead of honey), gluten-free, egg-free, dairy-free and sugar-free. Surprisingly, it's full of flavour and almost ludicrously easy to make - all you need are three ingredients and about five minutes. I prefer it with more coca and less sweetness, but you can work out your perfect combination yourselves. Have fun!

Ingredients
  • one ripe avocado
  • 2-3 tbsp. of cocoa powder
  • 2-3 tbsp. of honey or maple syrup
  • fresh passion fruits
Method
  • Blend avocado with cocoa powder and honey or maple syrup until smooth and creamy.
  • Refrigerate for at least 30 minutes.
  • Serve with passion fruit.

Ingredients
  • 2 ripe avocados
  • 1/4 red onion
  • 3 cherry tomatoes
  • 1/2 bunch of cilantro
  • juice of 1/2 lime
  • 1/2 tsp. of chili flakes
  • 1/4 tsp. of salt
Method
  • Cut avocados in half, remove seeds. Scoop out avocado from the peel.
  • Using a fork or mortar and pestle, smash avocado with lime juice.
  • Finely dice red onion and tomatoes, chop cilantro. Combine with avocado paste.
  • Season with salt and chili flakes.

  • 70 g of cornflour
  • 30 g of wheat flour
  • 1 tsp. of chili powder
  • 1 tsp. of sweet paprika powder
  • a pinch of salt
  • 75 ml of water
  • 2 tsp. of canola oil

Ingredients
  • 250 g of peeled shrimp
  • 1 tbsp. of butter
  • whole grain bread
  • one ripe avocado
  • one shallot, finely diced
  • juice of 1/2 lime
  • 1/2 tsp. of chili flakes
  • a pinch of salt
Method
  • To make the avocado spread, smash avocado with lime juice. Combine with shallot, season with chili and salt.
  • Set aside in a cool place for at least half an hour.
  • Melt butter in a pan and fry shrimp (about 2 minutes for each side of a shrimp).
  • Serve the shrimp with avocado spread and bread.

Ingredients
  • one ripe avocado
  • one green cucumber
  • juice of one lime
  • 250 ml of natural yoghurt
  • 2 tbsp. of chopped chives
  • 1 tbsp. of chopped mint
  • 1/2 tsp. of dried chili flakes
  • sea salt to taste
Method
  • Combine all the ingredients using a blender.
  • Refrigerate for about an hour.
