Young Beet Greens Pizza

The recipe might seem boring, as it only includes a couple of ingredients. Two ingredients in fact - young beet greens and feta cheese. The pizza dough is topped with beet and feta paste, baked with beet greens and sprinkled with fresh feta. One-track-minded, but delicious.

Recipe: Young beet greens pizza

Serves: 3
Ingredients
  • young beet greens
  • feta
  • freshly ground black pepper
Method
  • Work the dough again for a couple of minutes. Roll out the dough, form two small pizzas and place them on a parchment-lined baking sheet.
  • Cover with cloth and set aside in a warm place for 10 minutes.
  • Top pizzas with beet and feta paste and fresh beet greens. Bake at 220C for 10-12 minutes.
  • Before serving, top with crumbled feta and freshly ground black pepper.

Recipe: Beet and feta paste

Ingredients
  • a bunch of young beet greens, including young beetroots
  • 200 g of feta cheese
Method
  • Chop beet greens and beetroots.
  • Cook in salted water until they have softened.
  • Blend cooled beets with feta.

Recipe: Pizza dough

Ingredients
  • 350 g of flour
  • 2 tsp. of dried yeast
  • a cup of warm water
  • 2 tsp. of olive oil
  • one tsp. of salt
Method
  • Sift flour into a large bowl, add salt and yeast. Gradually add warm water and combine the ingredients with a spoon. Add olive oil and start mixing by hand. Work the dough vigorously on a pastry board for about 8-10 minutes. Place the dough in an oiled bowl and cover with cloth. Set aside in a warm place for about an hour.

spinach lahmacun

Lahmacun, the Turkish pizza, is a thin piece of dough topped with minced meat, usually lamb or beef.

It is traditionally baked in stone oven and sprinkled with freshly squeezed lemon juice before serving.

This is a vegetarian version with spinach and feta cheese.

Recipe: Dough

Ingredients
  • 500 g of wheat flour
  • 2 1/2 tsp, of active dry yeast
  • 400 ml of lukewarm water
  • one tsp. of salt
  • 3 tbsp. of olive oil
Method
  • Place sieved flour in a large bowl and combine with yeast and salt.
  • Gradually add water, stirring constantly. Add olive oil and work the dough by hand.
  • Once it's smooth and elastic place in an oiled bowl, cover with cloth and set aside in a warm place for about an hour.

Recipe: Spinach

Ingredients
  • 750 g of fresh spinach
  • red onion, sliced
  • garlic, sliced
  • one tbsp. of butter
Method
  • Melt butter in a skillet, add onion and garlic and cook until transculent.
  • Add spinach and continue cooking for 1-2 minutes, until the leaves have slightly wilted.

Recipe: Spinach lahmacun

Method
  • When the dough has risen, form little balls (the recipe is enough for about 20 small lahmacuns). Using a roller pin roll out the balls very thinly.
  • Top each with spinach, crumbled feta and chopped parsley.
  • Bake at 220 C for 7-10 minutes.
  • Before serving, top with freshly ground black pepper.

Diet-friendly, no flour, no gluten, no guilt. I have no intention of claiming that cauliflower crust is a perfect imitation of classic pizza dough with flour and yeast. It's different. And it's better.

Recipe: Tomato sauce

Ingredients
  • one onion, diced
  • 2 garlic cloves, thinly sliced
  • 4 tomatoes, scalded, peeled and diced
  • 1 tsp. of sugar
  • sea salt and freshly ground black pepper, to taste
  • 2 tbsp. of olive oil
Method
  • Heat the olive oil, add onion and garlic and cook until soft and golden.
  • Add tomatoes, season with sugar, salt and pepper. Bring to boil.
  • Simmer over medium heat until the sauce thickens (30-40 minutes), stirring every now and then.

Recipe: Cauliflower crust

Ingredients
  • one medium cauliflower
  • 1/2 cup of grated parmesan
  • 1/2 cup of grated mozzarella
  • one large egg
Method
  • Using a food processor, blend cauliflower florets until pureed. Lightly steam the cauliflower for 3-4 minutes. Set aside and let cool.
  • Use a cheesecloth to squeeze the excess water from the cauliflower.
  • Transfer to a bowl and combine with parmesan, mozzarella and a whisked egg.

Recipe: Cauliflower crust pizza

Ingredients
  • a few cherry tomatoes
  • a few thick mozzarella slices
  • a few leaves of fresh basil
Method
  • Spread the "dough" into one large pizza on a parchment-lined baking sheet.
  • Bake at 200C for about 15 minutes.
  • Top the pizza with tomato sauce, cherry tomatoes and mozzarella slices. Bake for another 10 minutes.
  • Top with fresh basil before serving.

Ingredients
  • 250 g of cherry tomatoes
  • 2 tbsp. of olive oil
  • a tsp. of ground cumin
  • 2 eggs
  • 100 g of feta
  • 2 tbsp. of freshly chopped parsley
Method
  • Heat the oil in a skillet, add cumin and fry for a moment. Add halved tomatoes and continue cooking, stirring every now and then, for about 10 minutes.

Recipe: Bacon and red onion confit

Ingredients
  • 4 red onions, sliced
  • 200 g of sliced bacon, chopped
  • 2 tbsp. of butter
  • 1/4 cup of beer
  • 2 tbsp. of balsamic vinegar
  • one tbsp. of brown sugar
  • one tsp. of salt
Method
  • Melt butter in a skillet, add onions and cook over moderate heat until softened.
  • Add bacon and cook for 2-3 minutes.
  • Add sugar, stir, let it melt and caramelize without stirring for about one minute.
  • Add beer, balsamic vinegar and salt. Cook over low heat until the liquid has evaporated.

Recipe: Shaved asparagus pizza

Ingredients
  • a bunch of green asparagus
  • olive oil
  • one tbsp. of sugar
  • a pinch of salt
  • freshly ground pepper
Method
  • Work the dough again for a couple of minutes and divide into three parts. Roll out the dough and place them on a baking sheet, lined with parchment paper. Cover with cloth and set aside in a warm place for 10 minutes.
  • Wash the asparagus, snap off the ends. Cut off the heads. Using a vegetable peeler, create the asparagus shavings. Transfer them to bowl, together with heads. Drizzle with olive oil, sprinkle with sugar and salt. Set aside for a couple of minutes.
  • Spread bacon and red onion confit over the dough and top with asparagus. Drizzle with olive oil and sprinkle with freshly ground pepper.
  • Bake at 220C for about 10-12 minutes.
