Jagodzianki - Blueberry buns

It wasn't love at first sight. Simple yeast cake with blueberries seemed so much less attractive than sophisticated desserts. I never craved anything below tiramisù or chocolate soufflé. Luckily for me, with age came wisdom. I finally learnt the value of delightfully hot, freshly baked blueberry buns with zesty icing.

Recipe: Jagodzianki - blueberry buns

Makes 12 buns

Recipe: The dough

Ingredients
  • one cup of milk
  • 1/3 cup of melted butter
  • 1/3 cup of brown sugar
  • 2 tsp. of instant yeast
  • 2 cups of flour
Method
  • Combine milk, butter and sugar in a pot. Scald the mixture. Set aside and let cool until lukewarm.
  • Add yeast, let them sit for a minute and add flour. Stir the mixture together until well combined.
  • Cover and let sit for at least an hour.
  • Work the dough. You might need to add some more flour (about 1/2 cup).
  • Sprinkle surface with flour. Roll the dough into a rectangular shape.

Recipe: Filling

Ingredients
  • 250 g of quark cheese (you can substitute it with ricotta)
  • one tbsp. of sugar
  • 2 egg yolks
  • one cup of blueberries
Method
  • Combine quark cheese with sugar and whisked egg yolks.
  • Top the dough with cheese and blueberries.
  • Role up dough and pinch edge together to seal. Cut into 12 rolls.
  • Bake at 200C for about 15 minutes.

Recipe: Lemon icing

Ingredients
  • 1/4 cup of confectioner's sugar
  • 2 tbsp. of freshly squeezed lemon juice
Method
  • To make sugar with lemon juice until thick and pourable.
  • Top warm buns with the icing.

Recipe: Cookie crumb crust

Ingredients
  • 150 g of biscuits
  • 3 spoons of butter
Method
  • Mix biscuits in a food processor until finely ground.
  • Melt butter and combine with crumbs.
  • Cover the bottom of a springform pan with the mixture.

Recipe: Filling

Ingredients
  • 500 g of fresh strawberries
  • 2 tbsp. of sugar
  • juice of 1/2 lemon
  • 500 g of quark cheese
  • 150 ml of heavy cream
  • 3 tbsp. of gelatin
  • 1/4 cup of water
Method
  • Blend strawberries with sugar and lemon juice.
  • Dissolve gelatin in hot water.
  • Combine quark cheese and heavy cream, add strawberries and gelatin and blend until smooth.
  • Pour filling pver the crust and refrigerate until the filling is set.
  • Top with fresh strawberries before serving.

halva cheesecake

Cheesecake is proud to be placed last in my cake ranking, slightly losing to the poppy seed roll. Then there are cakes that I actually enjoy: apple pie, banoffee, carrot cake, raspberry tart, chocolate cake and, the reigning champion, meringue cake, preferably with pistachio cream filling.

This cake belongs the tremendous group of cheesecakes that don't taste like cheesecake. As one can easily assume, it tastes like halva.

Recipe: Crust

Ingredients
  • 200 g of butter biscuits
  • 2 tbsp of butter
Method
  • Finely crush the biscuits using a food processor, transfer into a bowl.
  • Melt the butter and combine with crushed biscuits. Place in a buttered springform pan.

Recipe: Filling

Ingredients
  • 1 kg of quark cheese (or other fresh cheese)
  • 400 g of halva
  • 125 ml of heavy cream
  • 4 eggs
Method
  • Place crushed halva and heavy cream in a skillet. Do rondelka z grubym dnem włóżcie pokruszoną chałwę i kremówkę.
  • Cook over low heat until halva has dissolved completely. Set aside and let cool.
  • Process the cheese in a food processor. Add eggs, one at a time, mixing them with electric mixer. Add the halva mixture and combine.

Recipe: Halva cheesecake

Method
  • Pour the filling over the crust.
  • Bake at 160C for about an hour. Open the door of the oven and let the cheesecake cool.
  • Top with crushed halva. Refrigerate the cake overnight.
