Vegan pesto

I'm sure you all know, at the very least more or less, how to make pesto. This is just to remind you that pesto is always a good idea: for a quick pasta dinner, as an addition to a sharing platter, on what to do with herbs from your garden.

Traditional Ligurian pesto is made with basil, but I went for a blend of different herbs: basil, thyme, oregano and a bit of rosemary and mint. I skipped parmesan, but kept pine nuts from the original recipe. Feel free to experiment with herbs and nuts - try almonds, cashews, pumpkin seeds or walnuts.

Recipe: Vegan pesto

  • one cup fresh herbs: basil, thyme, oregano, rosemary, mint
  • 1/2 small clove of garlic
  • 3 tbsp pine nuts, roasted on a dry pan
  • 1/2 cup olive oil
  • 1/2 tsp soli morskiej
  • Blend all the ingredients to a smooth paste using pestle and mortar or a food processor.
  • Feel free to add more olive oil, depending on what kind of consistency you like.
  • If not using immediately, place the sauce in a jar, top with a layer of oil and refrigerate until needed..

warm tomato salad

Recipe: Warm tomato salad

  • 300 g of tomatoes - use variety of types and sizes (red, yellow, green, tiger, cherry)
  • 3 large garlic cloves
  • 150 g of aged goat cheese
  • 2 tbsp. of olive oil
  • 1/2 tsp. of coarse salt
  • freshly ground black pepper
  • 2 tbsp. of fresh oregano leaves

Recipe: roasted pumpkin and tomatoes soup

  • 700 g of pumpkin
  • 500 g of tomatoes - red, yellow and tiger
  • 1/4 bunch of fresh oregano
  • 500 ml of vegetable stock
  • one garlic clove, sliced
  • one onion, diced
  • 1 tsp. of chili powder
  • salt and pepper
  • 2 tbsp. of olive oil

Prawns in white wine sauce

Recipe: Prawns with white wine

  • 500 g of large prawns
  • one onion
  • 3 tbsp. of fresh oregano leaves
  • 3 tbsp. of butter
  • a cup of dry white wine
  • juice of one lemon
  • 1/4 tsp. of chili flakes
  • salt, to taste

roasted new potatoes with oregano

Recipe: Roasted new potatoes with oregano

  • 500 g of new potatoes, carefully washed
  • 5 tbsp. of olive oil
  • 2 lemons
  • a bunch of fresh oregano
  • 3 garlic cloves
  • coarse salt and freshly ground pepper, to taste
  • Whisk olive oil with lemon juice and minced garlic, add oregano leaves.
  • Combine the mixture with potatoes, set aside for half an hour.
  • Place in an oiled baking dish. Sprinkle with coarse salt and freshly ground pepper.
  • Bake at 200C for about 50 minutes.
