RECIPE: ROASTED FALL VEGETABLES

Ingredients
  • 3/4 Hokkaido pumpkin
  • 6 small potatoes
  • 2 small carrots
  • 5 shallots
  • 3 garlic cloves
  • 3 tbsp. of olive oil
  • 120 g of feta cheese
  • Fresh Rosemary branches
  • 1/2 cup of pumpkin seeds
  • Ground black pepper
Method
  • Season a baking pan with olive oil.
  • Add slices of pumpkin, quarters of potatoes and shallots, carrot sticks, slightly smashed garlic cloves and fresh rosemary.
  • Add with oil and bake at 400F for about 40 minutes.
  • Sprinkle freshly ground pepper, add feta and pumpkin seeds.
